Ingredients For Coconut Halwa
- 2 cups raw coconut, grated
- 1 cup jaggery, grated or finely chopped
- 3-4 tablespoons water
- 1/2 teaspoon cardamom powder
- 3 tablespoons ghee, plus 1 teaspoon for finishing
- 10-15 cashew nuts
How To Make Coconut Halwa
Step 1: Make The Coconut-Jaggery Paste
Add the grated raw coconut and jaggery to a blender. Pour in 3-4 tablespoons of water and blend until you get a relatively smooth, thick paste. Avoid adding too much water, as this will increase the cooking time.
Step 2: Roast The Cashews
Heat 3 tablespoons of ghee in a heavy-bottomed pan. Add the cashews and roast them over low to medium heat until they turn golden. Remove the cashews and keep them aside.
Step 3: Cook The Halwa
Add the coconut-jaggery mixture to the same pan containing the ghee. Cook over medium-low heat, stirring regularly so that the mixture doesn’t stick to the bottom or burn.
As the coconut cooks and the excess moisture evaporates, the mixture will gradually become thicker.
Step 4: Cook Until It Comes Together
Continue cooking for around 20 minutes, or until the mixture thickens and begins to come together like halwa. Cooking time can vary depending on how much moisture the fresh coconut contains, so use the texture rather than the clock as your main guide.
Step 5: Add The Finishing Touches
Once the halwa reaches the desired consistency, add the cardamom powder, another teaspoon of ghee and the roasted cashews. Mix everything well and switch off the heat.
Serve the coconut halwa warm for a comforting Shravan vrat treat.
Quick Tips For Better Coconut Halwa
Use fresh coconut for a softer and more moist texture. Keep the flame moderate once you add the coconut-jaggery mixture, as jaggery can catch at the bottom if the heat is too high.
Stir frequently towards the end when the halwa begins to thicken. You can also reserve a few roasted cashews for garnishing before serving.
